Great capacity : KitchenAid 6-qt. Pro Line Stand Mixer, Onyx Black.
I upgraded to this model after discovering that two batches of cake was just barely too much for my 5 qt Artisan tilt-head Kitchenaid to handle. While I do miss the tilt-head model for a number of reasons (easier access to bowl, not having to take the beater/whip off when removing the bowl from the mixer), I have to say that my absolute favorite part of this mixer is the bowl itself. I love that there isn't a "stand" on the bottom of it like the 4.5 and 5 quart models--just the little dimple. So, the bowl will still sit level on your counter without falling over, but I can also use the bowl over a hot water bath as a double boiler before moving the bowl to the mixer (very useful for making swiss buttercream).

I love the 11-wire whip that comes with this mixer (though it can be hard to hold onto for washing, since the gaps between the wires are *just* small enough that I can't get my fingers in there). I do think that it whips much faster than the usual 6 wire whip included with other models.

On a side note, when I received my mixer, the burnished flat beater had tiny bits of metal flaking off the top... so I called Kitchenaid to ask for a replacement. I asked if they could send me the coated version of the beater instead, since it's dishwasher safe, and they had no problem with that. It was all free, including shipping. Yea for Kitchenaid customer service.

I have made bernaise sause with ease as well as chocolate mousse using this pan.

One thing I think you will like is that the ceramic insert is easy to clean, even with melted chocolate on it.

Cleaning Instructions
For daily cleaning, warm soapy water is sufficient. Clean your All-Clad thoroughly after each use. Food films left of the pan may cause discoloration and sticking. To get rid of stuck-on food or discoloration and stains from using too high of a heat, we recommend cleaning your All-Clad with a product called Bar Keeper’s Friend. To use the Bar Keeper’s Friend, simply use a soft cloth or sponge and water and make into a soupy paste. This can be used on the interior, as well as the exterior of your All-Clad (excluding the Cop-R-Chef). The Bar Keeper’s Friend can also be used on the exterior of the All-Clad Stainless collection, LTD collection, and MC2 collection. For cleaning of the Cop-R-Chef exterior, simply use a brass/copper cleaner. If your water has a high iron content, you may notice a rusty discoloration. Use Bar Keeper’s Friend to remove it.

Excellent sauce pan : All-Clad Stainless 2-Quart Saucepan
This is another of the workhorse pans in my kitchen. The AllClad Stainless 2qt pot is marvelous for cooking sauces that will bubble or foam; for sauces involving fruits that may need to boil. The height allows for ingredients to grow, and the small diameter means you are not waiting for items to heat up. The pot heats quickly and evenly.

Try it for cranberry sauce at the holidays, or any small sauces involving milk or cheese. Remember that the pan does not have a great surface area, so timing and delicacy in preparations is key. Leaving the pot unattended on a high heat is not a smart idea. Keeping the pot with a good warmth, slowly working up the heat of your sauce or fruit is one of the best ways to use it.

The only downside of this pot is that yes, it is difficult to pour from, and the small surface area of the pot (=smaller open area) means that ladles are often too unwieldy for it. So be prepared beforehand to know how you're going to get your sauce out of the pot without making much of a mess.
